This is really quick to make. This serving is for one. Most of my recipes serve one or two as they are made to be quick and easy for the person who lives alone....
1/4 Small Red Cabbage thinly slided
1 small Granny Smith apple peeled and cubed
1/2 avocado diced
1 TBL chopped mint
1 TBL chopped coriander
1 TBL dry cranberries
1 TBL sunflower seeds
1 tsp apple cider vinegar
1 tsp olive oil
Gently mix the ingredients together and toss with the apple cider vinegar and olive oil (you may wish to increase the quantity of the vinegar and olive oil to taste).
Seriously good for you and yummy!
