One thing you will find with my recipes they are made to be quick and easy with little fuss. My lifestyle is so busy that the last two years I have eaten mainly out or been at some function or a restaurant review, and it did catch up with me. I'm still very busy and out most nights at some function so I have made a new rule to try and eat 'clean' as much as I can, and eat before I go out rather than feast on some of the delicious (but not healthy) treats.
Here is one recipe I created that's very filling, tasty and good for you.
Makes 4
4 Cos Lettuce Leaves (Or use silverbeet, other lettuce)
1 cup of walnuts (grinded in blender)
1/4 Red pepper diced
1/3 bunch fresh coriander chopped
1/3 bunch fresh mint chopped
1 spring onion chopped
1/4 cup rocket chopped
1 tsp cumin
2 TBL Tamari
Mix all together and place in lettuce cups, fold....eat!
