Recently my neighbours gave me a bunch of homegrown silverbeet, so I decided to turn it into a delicious salad. This salad would probably be even better with baby spinach, however with the dressing and the other ingredients it was delicious.
Per Serve
3 Stalks of silverbeet chopped with stalks removed (or half package of baby spinach)
Half a mango chopped
Half a cup of fresh coriander (chopped with stalks removed)
Half a cup of fresh mint (chopped with stalks removed)
Half a cup of raw cashews
3 limes (juiced)
2 TBL olive oil
1 TBL rice syrup
Finally chop the the greens.
Mix with the mango and the cashews.
Pour on dressing (the lime juice, olive oil and rice syrup mixed together).
